It's fall which means Pumpkin Spice season (well almost)! If your anything like me your heart does a little pitter patter at the smell of cinnamon and thoughts of cooler weather. Pumpkin spice lattes have been one of my fall staples but aside from not wanting to drain my bank account spending $6 on a latte from starbs I also want am one THOSE people who likes to pay attention to the things I put into my body. There is nothing healthy about a latte from Starbucks. So I went on the hunt for a DIY pumpkin spice recipe that I could make at home when I had a taste for one that was healthy and wouldn't leave me feeling like crap, with some trial and error and a lot of tweaks I finally figured it out! Full disclosure if you want to treat yourself to a Starbucks latte, by all means, go for it just remember everything in moderation and there are healthier alternatives to everything if you look.
Also... I'm not a professional chef/baker/latte maker so proceed with caution. Kidding... kinda.
What you'll need:
Pumpkin Puree (I personally used an organic pumpkin pie puree that was pre-spiced with cinnamon and nutmeg)
Cinnamon & Nutmeg or any other spices you might want to add
Creamer (I use coconut milk)
Optional: Whipped cream. You can also make your own with coconut cream which is my all time favorite! But for the purpose of this recipe and the fact that my kid was napping when I was shooting I used a store bought coconut whipped cream I found at my local health food store.
Brew coffee a little stronger than normal. Lattes are normally made with espresso. Combine in a stove top pot brewed coffee, 1/8 cup of pumpkin puree, a dash of your choice of spices, and the amount of cream to your liking. Bring to a slow boil and mix until creamy.
If you like your lattes on the sweet side you can add your choice of sweetener to the pot. Pour into your favorite mug! Top with whipped cream (or not) and enjoy!
