Happy First Birthday With Healthy Cake Recipe
My sassy little sweet pea is a year! With all her milestones I found myself dreading my baby turning ONE. 365 days old! What even. First off I can't believe I've turned into one of "THOSE moms getting emotional about a first birthday. The amount of change I've watched this little human go through in just one year's time is just mind blowing. She went from being a tiny itty bitty baby that was able to fit through my vaginal canal (though I promise I didn't think she was little at the time) to a giant-sized tot who runs the show. Her laughter is contagious; thigh rolls almost as deep as her dimples, appetite of a grown man, and the best snuggles in the world. Happy Birthday baby girl!
Birthdays in my family were always small and cozy and consisted of our favorite meal, a yummy dessert, and time spent together hanging out for the day. I wanted to carry this tradition through with my kiddos. We celebrated at home with just immediate family, sub sandwiches, laughs and bubble blowing. It was extra special because my husband's parents and grandmother were able to make it in from out of state.
Because I couldn't resist an adorable ONE outfit, I went a little overboard with the accessories. I purchased everything from Amazon. I mixed an matched with different shops to create this look. For decor, I wanted to keep it simple for pictures with a just a little pop of color. I found these adorable tissue pom pom paper garlands that I was able to hang up for part of the backdrop. The highchair is something she uses on the regular it's from Girls With Brushes.
I made her cake with just bananas and eggs. The frosting is coconut cream! Sugar-free, dairy free, grain free, nut free, dye free! #healthymomwin! I work hard to keep her diet healthy clean the last thing I wanted to shove in her mouth was sugar and dye-filled cake! "Happy birthday heres what a down immune system feels like"... no thanks. We did use flowers that were sugar and cornstarch flowers for decor, but she didn't eat them.
3 or 4 Soft Bananas
2 4 Inch Cake Pans
1 Can of Coconut Cream ( You'll want this cold stick this in the fridge about 5 hours ahead of time)
Pre-heat oven to 350. In two different bowls separate the egg yolk from the whites. In one bowl mash the bananas in a bowl with the egg yolk. Whip the egg whites in the other bowl with a hand mixer until white and fluffy. Then use hand mixer to mix banana and yolks. Once smooth slowly pour in the egg whites. Oil or butter the cake pans. Bake for 20-30 mins until cooked through. Cool completely before frosting!
Scoop out the coconut cream from the cold can. Leave the excess liquid. Use hand mixer to whip. If you don't use this right away it's best to keep it in the refrigerator.
